March WELCA News (Help Fix the Sign Up Sheet)

Lenten Lunches:

We are providing the Lenten lunches during the Lenten Season at Church of the Resurrection. This is one of WELCA’s main fund-raisers for the year. We have a great list of volunteers bringing food but the list is “broken.” It still has some slots open. Please help us by signing up. There is a signup sheet in the hallway or contact Pam Lien with any questions you might have.

Epiphany Luncheon:

Held on February 1, we had a wonderful time with Kathie Hunter as our speaker. She gave a very informative and entertaining speech on “How to prepare for Pre-Op.” She presented 3 models on how to dress and not to dress (this was the entertaining part). The group pictures taken in the sanctuary are on the WELCA bulletin board. If you would like a copy, the 4×6 is free. If you would like an enlargement, the 5×7 is $2.49 and the 8cx10 is $3.90. Light Ailoi: Serve this garlicky French mayonnaise with broiled chicken or fish, or drizzle over grilled asparagus or broccoli.

5 Tbsp buttermilk
1 close (medium) garlic minced
3 Tbsp reduced-calorie mayonnaise
1/8 tsp salt
1 tsp fresh lemon juice
1/8 tsp black pepper, freshly ground

In a small bowl, stir together buttermilk and mayonnaise. Stir in lemon juice, garlic, salt, and pepper; mix well. Set aside for 5 minutes for flavors to blend. This sauce can be made several hours in advance; just cover and refrigerate. If desired, add 1 tsp minced dill weed or 1 Tbsp minced chives to the sauce. Yield: 8 (1Tbsp) services. 1 serving: 16 calories, 0.9g carbs, 0.4 protein, 1.3 g fat. Exchange: free food.
